Banana Nut Bread

Ingredients:
1 ½ (300g) cups ripe bananas
½ cup (1 stick) unsalted butter, room temperature
1 cup (209g) granulated sugar
½ cup (75g) brown sugar
2 eggs
¼ cup (50ml) milk
1 ¾ cup (265g) all purpose flour
1 ½ tsp. cinnamon
1 ½ tsp. (7g) baking powder
1 tsp. (6g) baking soda
1 tsp. (3g) vanilla extract
½ tsp. (2g) salt
1 cup (100g) chopped toasted walnuts (optional)
Instructions:
Preheat the oven to 350 degrees Fahrenheit. Start by mashing 3 very ripe bananas and set aside.
In a medium bowl combine the all purpose flour, salt, baking powder, baking soda, and cinnamon. In a large bowl cream together the butter and sugars. Add the eggs, until incorporated then add the mashed banana and milk. Then add the vanilla extract and mix in.
Fold the flour mixture into the banana mixture, just until combined. Fold in the toasted walnuts and pour into a heavy greased 9×5 inch loaf pan or three mini loaf pans. Top with chopped walnuts.
Bake for 45-50 minutes, until a skewer poked in the center comes out clean. Remove the pan from the oven and let cool for 10 minutes before popping it out onto a cooling rack. You can enjoy this bread warm from the oven with salted butter, it’s delicious! Store the bread in an airtight container in the fridge for up to 5 days. You can freeze the loaf for up to a month.
